Cadbury Dream Egg Cookies

These adorable mini egg cookies are filled with Cadbury mini egg chocolates and laced with white chocolate chunks. They are the perfect treat to make this Easter.


The cookies are soft and chewy on the inside, with slightly crisp edges and filled with flavour explosions of mini egg goodness! Easter for us is a time for slowing down and spending time with our loved ones - and, what better way to do that than with a scrumptious cookie baking gathering!

Cadbury Dream Egg Cookies

Ingredients:

  • 400 g Cadbury's mini eggs
  • 100g White chocolate chips
  • 2 Eggs (room temp)
  • 1 tsp Baking soda
  • 230g Butter, softened
  • 165 g Brown sugar, light firmly packed
  • 100 g Granulated sugar
  • 400 g Plain flour
  • 1 tsp Salt, fine
  • 1 tsp Vanilla extract



Method:


  1. In a large mixing bowl, Beat the butter and sugar with an electric mixer until light and creamy.
  2. Scrape down the sides of the bowl and add vanilla and eggs, beating at a low speed until combined.
  3. Sift into the mixing bowl the flour, baking soda and chocolate chips. Use a rubber spatula or wooden spoon and mix until it begins to form a dough. Add in the 2/3 of the Mini Eggs that are chopped finely.
  4. Refrigerate the dough for 1 hour. Whilst the dough is chilling, preheat your oven to 180C and line a cookie tray with baking paper.
  5. Using a cookie scoop or table spoon, scoop the dough into 2cm wide balls and place on the baking tray and flatten slightly.
  6. Place in the oven and bake for 10-11 minutes. At the 7-8 minute mark, open the oven and gently place the remaining Mini Eggs on top of each cookie and return to finish baking until the edges are golden and slightly crisp. If you like a soft chewy cookie, you will want the centre to look slightly gooey! Remember, they will continue to cook whilst out of the oven!
    If you'd like a chewy, crispy cookie - simply baking for a few extra minutes.
  7. Allow the cookies to cool completely before storing in an air-tight container. Enjoy.
