White Chocolate Peppermint Cookies

Christmas is approaching! And nothing makes us happier than fresh cookies straight from the oven. These melt in your mouth cookies are perfect for making with the kids, gifting to loved ones or stashing away for yourself (Cookies = self care!!) They are crispy on the edges, chewy in the middle, laced with chocolate and finished with a little candy cane cheer.


White Chocolate Peppermint Cookies
Makes 10-12 cookies
Ingredients:
- 1/2 cup unsalted butter
- 3/4 cup sugar
- 1 medium egg
- 1/4 tsp peppermint essence
- 1 1/4 cups all-purpose flour
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 cup white chocolate chips
- 3 candy canes, crushed
Method:
- Preheat your oven to 185C
- In a mixing bowl, beat the butter & sugar until creamy. Add the egg & peppermint and continue to beat until light and fluffy.
- Sift the flour, cocoa powder, salt, baking powder & baking soda into the bowl. Mix well until combined.
- Stir through the chocolate chips. Place the dough in the freezer for 5-10 minutes whilst the oven continues to heat.
- Roll the dough into balls and place on a lined cookie sheet, leaving 2-3cm between each cookie. Lightly press them down and top with more white chocolate.
- Bake for 10-12 minutes, until slightly crisp around the edges and a little soft in the centre.
- Remove from the baking tray and place on a wire cooling rack. Top each cookie with some crushed candy cane immediately.
- Allow to cool slightly before enjoying!
